Hi all. I need to know the best way to use fresh ginger in cocktails.
i.e - should i grate it in and then shake and strain - or should i muddle larger chunks and shake. Should i strain it at all or leave it in the (rocks) glass? Any other tips...?
I need to know for a competition, but have not used it before - i need to seem to know what i'm talking about! any help would be much appreciated.

grated, shaken with your ing. then strained into glass.....or a pinch of grated on top
if you put into glass and shake and leave, it makes for an ugly presentation...floats right to the bottom
