Okay, we where making tons of bloody marys last night and a couple of questions came from it. I perfer to make them in pint glasses while others wanted to use highball glasses. Also, we have a bloody mary pre-mix we can use if we want to. I like building mine from scratch to the customers preference. The argument to that is it is much faster to use the mix when we are slammed. What are your preferences and what do you do at your bar? T

personnally i hate pre made mixers for cocktails!!! i always find that they seem to taste better made from scratch and the customers much prefer to see the effort being put in, rather than pouring a vodka then 1 other bottle... i think most people know that a bloody mary isnt just vodka and tomato juice, and also your right about making it to there specifications - e.g some people dont like tobasco in it, whilst others dont want worcestershire, or they may only want very little of either, so i would say mix it yaself... altho i do know that it can be alot easier to use the pre mix when in a real rush. i have a customer in my bar who always wants tons of worcestershire, so much so that the drink is deep brown

TIldy,
I'm in agerement that most pre-mixes are vile, and coustomers love to see you build their drink reather than just pour form two bottles. I have always make my bloodys from scratch, and you can also use a little flair with those bottles of tobasco, worstichire, bitters..... etc. Remind the rest of the staff that being super busy should not affect the quality of the drinks.

As a suggestion, make your own premix and keep it on the side should you get into the weeds. It will have the same quality of your "house" bloody mary, you can doctor it up quickly to someones specifications and it can help you in a time crunch!

As far as the galss you choose to make it in keep in mind that if you are using a pint glass you should be charging more because you are using more vodka (i hope) and more mixer, thus a price increase. One thing that drives me up a wall about some bars is that I can go in and order the same thing for a week straight and get six diffrent things if five diffrent glasses. when I question this the bartender says "well, that is just the way I do it." That is bullshit and the bartender should get a talking to. Drinks should be made the same way by every bartender at a certain place so that they are uniform in quality every time one is ordered.

Jes
